Kanzi Pummmpkin soup

Select a nice, firm pumpkin without any soft spots. Peeling off the skin is not that easy, but once it’s done the rest is a piece of cake. Besides, the results are impressive: a delicious simple soup with a seductive orange colour and a touch of Kanzi sweetness.


What do you need? For 2:
½ kg pumpkin, skinned, seeded and cubed
1 a clove of garlic, finely chopped
300 ml vegetable brot*h
1 onion
1 spring onion
1 Kanzi
1 tablespoon butter
2 teaspoons ginger powder
100 ml apple juice


Preparation
Cook the pumpkin with the chopped garlic in vegetable stock. This takes about 20 minutes. Meanwhile, peel the Kanzi apple and cut it into cubes. Heat the butter in a large saucepan and add the chopped onions. Cook for 2 minutes and then add the diced Kanzi, ginger powder and a little salt and cook for 8 minutes over medium heat until the ingredients are tender. Liquidize the cooked pumpkin, add the apple juice and bring the soup to a simmer. Spoon the apple mixture into the soup and garnish it with a sliced spring onion.
